Crustacean/Thanh Long-Inspired Garlic Noodle Recipe

I’ve only been to Crustacean and Thanh Long Restaurants in San Francisco a few times, but their garlic noodles left quite an impression on me. I spent an afternoon years ago making batch after batch of garlic noodle recipes found online until I found a recipe that I liked the best.  I have slightly modified it to my taste (mainly reducing the butter and sugar since I generally don’t like savory food with notable sweetness to it).

Ingredients:

16 oz yellow noodles (I use pancit egg noodles, which are my personal favorite, found in the refrigerated section, not the dry one)
Water, for boiling the noodles

Garlic Sauce Ingredients:

3/4 stick unsalted butter
3 tablespoons minced garlic
1 tablespoon Maggi seasoning sauce
1 tablespoon oyster sauce
1 tablespoon fish sauce
1/2 tablespoon sugar
Pinch of freshly ground black pepper
Grated Parmesan cheese, to preferred taste

Heat up a pot of water until boiling. Add the noodles into the boiling water and cook the noodles. Do not overcook as the noodles will turn soggy. Transfer the noodles out and drain dry.

Prepare the garlic sauce using a saute pan on medium to low heat. Add the butter into the pan and when it melts, add the garlic and saute until aromatic but not browned. Add all the seasonings into the pan, stir to combine well.

To serve, toss all the noodles with the garlic sauce. Add Parmesan cheese, toss to combine well. Serve immediately.
