When I’ve gone to Thailand (twice) and Philippines in the past, I made it a point to find a flight that had a stopover in Japan for several hours so I can leave the airport and grab some amazing meals before the next leg of my flight. I usually spent at least a couple hours checking flight options to find a flight that had the stopover I wanted at a price I willing to pay. I have also booked several one way legs for a trip to stopover in different places.
I recently discovered there is a website called Airwander that is a stopover search engine that uses your travel dates to find various city options while saving money. I am really looking forward to trying this website in the future when I plan my next multi-leg type vacation!
